If the pumpkin purée looks watery, drain off some moisture. Mix the pumpkin, egg, mozzarella, Parmesan, and pork panko; let sit for 5 minutes. The mixture should hold its shape—if it spreads, add 1 tablespoon more pork panko and let it rest again. Grease a muffin tin and press the mixture into 6 nests. Bake the empty nests for 15–20 minutes, until the edges begin to set and turn golden. Meanwhile, cook and season the beef, then drain off excess liquid. Fill the nests with beef, top with cheddar, and return to the oven until the cheese melts and the edges are golden. Let them rest in the pan for at least 5 minutes before removing. ---- Chocolate-Covered Pumpkin Cheesecake Bites Makes about 7 bites Ingredients - 226 g full-fat block cream cheese - 100 g plain pumpkin purée - 2 scoops collagen - Dark chocolate, enough to coat the bites Directions: Mix the cream cheese, pumpkin, and collagen with a fork until combined. Shape into 7 balls and freeze for a couple of hours, until firm. Melt the chocolate, spoon it over each bite, and chill until the coating sets. I used collagen for extra protein; the chocolate you choose will affect the final nutrition numbers. --- #pumpkin #highprotein
